When I first went to the Orders & Quotes screen it asked me via a pop-up box what number I would like to start the orders/invoices from. I clicked ok without setting the value I wanted - is there a way to get the pop or back or redefine the starting invoice number?

Yes, you can reset the order numbering in Easify Options.
Go to Tools -> Options -> Orders & Quotes -> Advanced and you can click the Change Order & Quote Auto-numbering button.

PS. you can only change the order number to be higher than the last order number that was previously used. So if your last order was order number 1000, you couldn't change the next number to 999 or lower. You could only change it to 1001 or higher.
