WooCommerce orders paid by bank transfer don't transfer to Easify...

This is by design with WooCommerce.

If you enable the WooCommerce Direct Bank Transfer payment option, when a customer pays for a website order using bank transfer, WooCommerce places the order On Hold.

This is to allow you to verify that the funds have been received before moving the order to Processing.

The Easify WooCommerce plugin only sends an order to Easify when the WooCommerce order status changes to Processing.

So in this scenario you would need to manually change the order in WooCommerce to Processing to have it sent to Easify and the stock allocated.
